Banana bread.
I want to make some this week. Does anyone have a good recipe?
I've tried one from Marie Claire's Kitchen and was disappointed with the result - too cakey and tasteless. I've been searching the net and banana bread recipes seem to vary widely in their ingredients.
Anyone have one that makes moist, really tasty and bready (not cakey) banana bread?

I too am looking for a good recipe for banana bread.. I have heaps of frozen bananas waiting to be made into a lovely cake.... Sorry I can't help but I am hoping to be helped by your post ;)
I reckon the taste depends on how far gone you bananas are (plus maybe how much butter, sugar & vanilla essence). Sorry Soph I've only the cakey type. Let me know if you find a bready one, though I'm not sure I have a deep enough tin for the cafe style big ones.
I had some very disappointing Pear and Raspberry bread yesterday at Macquarie from the Loft. Oh well.
Yeah, I think the recipe I tried didn't have enough bananas, and had too much flour maybe.
My tin isn't big enough for cafe style ones either...
I soooooo love Pear & Raspberry bread. The best I've had is from Clodeli in Clovelly. YUM.
Sorry I can't help you Soph. You might just need to keep buying it. There's a stall at Orange Grove Markets (Orange Grove Public School, Lilfield) that sell banana bread by the loaf. I used to stick it in the freezer and cut pieces off when I needed.
But I know...you actually want to BAKE it yourself.
Nixter...you are such a great food economist. I feel ashamed at the way my kids waste bananas. (It SO didn't happen back in 1996)when I know I need to put the overripe bananas to much better use.
I also am in search of a good recipe. A while back I cut Bill Granger's banana bread recipe out of the Good Weekend, but i haven't tried it... maybe you could try it? I trust bill, but he might not get it right.. He says though that it's the sour cream that makes it moist. But it's a two-tin recipe.
I might add, this is making me mighty hungry - i've got a stomach bug at the moment and can't eat anything but plain food! haha...
1/4 cup Firmly packed brown sugar
1/4 cup almonds, chopped
375 ml sour cream
1 tsp bicarb soda
125g unsalted butter, melted
1 cup caster sugar
2 eggs, lightly beaten
1 3/4 cups plain flour
1 tsp baking powder
1 tsp ground cinnamon
2 ripe bananas, mashed
Preheat oven to 180c. Grease and line two 10 x 18cm loaf tins with baking paper.
In a bwol, mix together the brown sugar and almonds, and put aside.
In a large bowl, mix together the sour cream and bicarb soda, set aside for 5 mins then stir in the melted butter, sugar and eggs.
In another bowl, combine the flour, baking powder and cinnamon. Gradually fold in the sour cream mixture followed by the bananas.
Pour the mixture equally into the prepared tins and sprinkle the brown sugar mixture on top.
Bake for 1-1 1/2 hours or until a skewer comes out clean. Set aside and cool in tins for about 20 mins before turning out onto a wire rack to cool.

Let us know how it goes Soph - cause I've been searching for a good recipe for years. I want banana bread like I can buy in a cafe! That's not asking too much is it?
Aaaah Liz - I love all things walnut, but alas I have been walnut free for over a year now, and crave them!

I made some chocolate and rasberry slices this afternoon - they were yum!

Note, the recipe omits where to put the butter - I reckon it goes in with the wet ingredients. I make this and its always a hit.
